ABOUT THE AUTHOR:

Mother of five, Lyn Baylis MSc was born in London, England in 1949.  She is a Multifaith Chaplain, who blends her deep love of the countryside with her spirituality, which in turn provides a unique dimension to her winemaking.  She grew up in Sussex, where perched on the draining board as a small child she watched her mother prepare and make wine, until she was eventually allowed to stir the ingredients and slowly became involved with all the processes herself.  Over the years, she has shared her winemaking skills within winemaking circles and honed her skills further by taking part in competitions.

Lyn has recently retired to Sussex where she continues making wines, as well as giving talks on all aspects of winemaking around the UK.  An advocate of a holistic approach to medicine and natural remedies she is presently engaged in additional research into wine and its curative qualities.

From the author’s introduction:

I cannot remember a time when wine making was not an important part of my life. My mother made wines out of just about anything. As soon as I was old enough I was recruited to help with the work of gathering fruit, cutting up vegetables and stirring the must (the initial mixture of fruit, flower or other ingredient plus yeast and sugar) daily. Our larder was full of bottles, buckets and demijohns (fermentation jars), with other demijohns wherever there was an empty surface. One of my earliest recollections is the plop, plop, plop of the fermentation lock in a demijohn on the landing windowsill outside my bedroom. It was almost a lullaby.

I had a very happy childhood. My father, already retired when I was born, looked after me while my mother worked. Each day we took a long walk through woodlands behind our house and over the fields to feed the ponies. During these rambles, he taught me about the spirits of the trees, flowers, animals and birds, and how to feel the energy of all living things, explaining that all life was somehow interconnected. His openness of spirit, and gentle relationship with nature instilled in me a deep love of the wonderful planet on which we live, likewise a desire to understand how I could become more in tune with nature and the spirit world. It has been a lifelong journey, and one that still fills me with awe.
